I don’t generally like recipes that call for a cake mix…something about making a homemade recipe with a box mix just seems wrong, LOL.

These were really good, and *very* easy! They would be great as a “holiday” cookie.

Gooey Butter Cookies

(From Keeping Good Company)

  • 1/2c butter
  • 1/4t vanilla
  • 1 egg
  • 1 (8oz) pkg. cream cheese
  • 1 (1 lb. 2.25 oz) box butter recipe cake mix powdered sugar for dipping
  • cooking spray

Beat butter, vanilla, egg, and cream cheese until light and fluffy. Mix in dry cake mix. Chill for 30 minutes. Preheat oven to 350^. Lightly coat cookie sheet with cooking spray. Drop by teaspoonfuls in a bowl of powdered sugar; roll into balls. Bake 10-12 minutes.

Makes 3-4 dozen super-yummy cookies!
