Fall and Winter Breakfast Ideas

If you can’t tell, we’ve been working to “fine tune” our menu management around the house. 🙂

  1. I love this recipe! I make it, cut it in serving pieces, wrap in foil and freeze. Then warm in the microwave. But of course you would just cut and serve.
    Baked Oatmeal
    1 c. vegetable oil (I use 1/2 cup oil and 1/2 cup applesauce)
    1 1/2 c brown sugar, packed
    4 eggs
    6 c quick cooking oats (one of the small containers is *not quite* 6 cups, so I finish off with my regular cooking oats)
    4 tsp baking powder
    1 tsp cinnamon
    2 c milk
    Mix oil, sugar and eggs; beat with electric mixer on high speed until yellow and glossy. Add remaining ingredients and beat on medium speed until well blended. Bake in a greased 9×13 pan at 400 for 30 to 40 mins. May add 1 c chopped apple (and I do), or 1 cup raisins. Cut it warm out of the oven and pour milk over (or half and half), and it is DELICIOUS!!
